The story of Camello is shaped by the history of Middle Eastern immigration to Mexico in the late 1800s and early 1900s. Lebanese and other Arab families arrived seeking new beginnings, bringing their food traditions and sense of hospitality with them. In cities like Puebla and the northern states, they began to cook with local ingredients and flavors. Shawarma slowly transformed into tacos árabes and, eventually, al pastor. These migrations created a cuisine that was both Mexican and Middle Eastern, built on adaptation and shared identity. Camello carries that legacy forward, celebrating the flavors and stories that connect two cultures at the table.
Camello takes the rich history and asks, "What if a Mexican traveler brought Mexican products and traveled to Lebanon?" That's how our Heirloom Corn Pita came to be. We Proudly source Heirloom Organic Corn from Tlaxcala, Veracruz, and Oaxaca. The Pitas are supplemented using Organic Wheat from Sonora and California.
Our Pita does NOT contain any food dyes (natural or otherwise) or preservatives. The Pitas are Naturally dyed by the color of the corn.
Camello proudly supports grain farmers from both MX and CA. We highlight seasonal produce from the Santa Monica Farmer's Market as well as use proteins from CA Ranches. Our food features Syrian, Palestinian, Lebanese, Chinese, Japanese, Mexican and other worldly flavors. You can find familiar flavors like Al Pastor married with Labneh and Miso, as well as Kibbeh using Wagyu Beef, Black Garlic, and Koji.
